Salad
1C Romaine lettuce chopped
2C Shredded napa cabbage
1C Shredded purple cabbage
1-1/2C Roasted chopped chicken breast with garlic, salt, and pepper
8oz Canned mandarin oranges (save the juice)
1/2C Crispy wonton strips
1/4C Sliced almonds
1/4C Chopped fresh cilantro
2T Toasted sesame seeds
Plum dressing
2T Chinese plum sauce
2T Rice wine vinegar
1T Soy sauce
1/2T Honey
1/2T Garlic chili sauce
1/2t Sesame oil
1/2T Reserved mandarin orange juice
Process
Arrange the lettuce, Napa cabbage, and purple cabbage on a platter (toss to combine)
Top the lettuce bed with the chicken, oranges, wonton strips, almonds, cilantro, and sesame seeds
In a separate bowl whisk together the plum sauce, vinegar, soy sauce, honey, garlic, chili sauce, sesame oil, and mandarin orange juice
Season to taste with salt and pepper.
Toss the salad with the dressing and top with crisp wonton strips
Serve the same day. It does not go well overnight
