Chicken Fettuccini Alfredo

Ingredients

1T                 Olive oil

1T                 Butter

1lb                 Boneless skinless chicken breasts cut into approximately 2in slices and seasoned with salt and pepper.

1-1/2C           Heavy cream

2ea               Cloves of garlic chopped

4oz                Butter

1-1/2C           Grated parmesan (divided 1C and 1/2C)

2t                 Black pepper

4T                 Chopped parsley (or 2t dried)

1 lot               Fettuccini or spaghetti about 1/2 of a 16oz box

Process

Heat oil and butter in a saucepan over medium heat

Sauté the chicken 8-9 minutes and set aside

Warm cream and garlic over medium low heat until steaming

Whisk in butter until melted

Add 1C of parmesan, 2t pepper, and parsley (4T fresh or 2t dried)

Increase the heat and simmer to reduce until thickened

Add the sauce into the sauté pan with the chicken

Cook the pasta per package directions

Drain the pasta and serve

Cover with the sauce and 1/2C of parmesan

Garnish with parsley and grind some black pepper on top
