Ingredients
3lb Yellow baby potatoes
Coarse salt
Olive oil
Process
Put the potatoes into a pot
Add water to just cover the potatoes
Bring to a boil
Boil for 12 to 15 minutes or until the potatoes are easily pierced by a paring knife
Drain
Sprinkle the cooked potatoes with olive oil
Sprinkle with salt
Toss
Sprinkle with parsley or not. Celeste does not add parsley
Serve at room temperature
