Cedar Plank Salmon on the Grill

Ingredients

2ea Salmon fillets about 6oz each, skin on

Olive oil

Salt and pepper

12inches Untreated cedar fencing 5-1/2in wide

3sprigs Rosemary

Instructions

Immerse a cedar plank(I use untreated cedar fencing cut into about 12in pieces) in water for 60 minutes (30 minutes if you are behind)

Coat salmon with olive oil

Salt and Pepper

Put salmon skin side down on plank, on top of the rosemary

Cook in a charcoal grill with the lid closed and a medium (one chimney of charcoal) fire on side away from the fire  until the salmon flakes (or until it gets to the doneness that you like, probably about 30minutes)

As an alternate

Bake in a 350F oven for 15 – 30 minutes. checking at 15 minutes
