Casey Chili

Ingredients

2C      Diced fresh tomatoes skinned

Alternate

1Can  Diced tomatoes with juice  (14.5oz)

1/2C   Celery (Chopped)

1/2C   Green pepper (Chopped)

1C      Onion (Chopped)

2t        Sugar

1C      Frozen peas

1C      Frozen edamame or lima beans

1Can  Dark red kidney beans or black beans      drained (14.5oz)

2C      Dry penne pasta

1lb    Ground beef

10ea   Sausage links (cooked and drained)

Sausages, onions, celery, and green pepper

In a large Dutch oven

Brown the sausages in a tablespoon of olive oil.

Remove, cut into 1/3’s and reserve

Save the drippings

Brown the onions and the beef in the sausage drippings

Add the celery and green pepper cook for 3 minutes

Pasta

Cook the pasta al dente in a separate pot

Combine

The sausages, onions, celery, green pepper, pasta, and all the other ingredients in the Dutch oven

Salt and Pepper to taste

Put the lid on

Turn the heat off

Stir occasionally until ready to eat
