Ingredients

Brine

3 1/2lbs         Picnic ham

2T                 Salt

2T                 Sugar

2T                 Brown sugar

1T                 Ground cumin

1/4C              Chile garlic sauce

1gallon          Water

Bake Ingredients

2C      Sliced onions

Slaw and tortillas

2C      Shredded cabbage

1/4C   Shredded carrots

1/8C   Scallions sliced thinly

3/4C   Radishes quartered and sliced thinly

1C      Loosely packed chopped cilantro

1/2C   Mayonnaise

2T      Sugar

2T      Apple cider vinegar

Package of corn or flour tortillas

Process

Brine overnight

Bake on a bed of sliced onions

           Uncovered 3hrs @300F

Covered 2hrs @350F

Serve with the slaw and tortillas
