Ingredients
6oz Farfalle
12oz Medium shrimp, peeled and tails removed
4t Cajun seasoning divided
Salt
Black pepper
4T Olive oil
1T Garlic minced
1/2C Dry vermouth
1-1/2C Heavy cream
2/3C Grated Parmesan
2/3C Tomato seeded and diced
4T Parsley chopped
2/3T Lemon juice
Process
Cook the farfalle in boiling water per package directions
Reserve 1/2C pasta water and drain the farfalle
Toss the shrimp with 2t Cajun seasoning, salt, and pepper
Heat the oil in a saucepan on medium high
Add the shrimp and cook until golden and opaque
Transfer to a plate
Add the garlic to the pan and cook until fragrant (about 30 seconds)
Deglaze the pan with the vermouth cooking until nearly evaporated
Reduce the heat to medium
Stir in cream and remaining 1/2t Cajun seasoning
Bring to a simmer
Reduce heat to low
Stir in Parmesan and simmer
Stir occasionally until thickened
Stir in farfalle, tomatoes, shrimp, parsley and lemon juice until combined
Season with salt and pepper to taste
Add pasta water if needed to reach desired consistency
