Blackberry cobbler

Toss together

8C      Blackberries fresh or frozen

1C      Sugar

1/4C   Instant tapioca

Juice of ½ lime

Pinch of salt

Combine and knead in

1C      All purpose flour

1C      Sweetened shredded coconut

3/4C   Sugar

1/2C   Pecans coarsely chopped

1/2t     Baking powder

1/4t     Table salt

1/2C   Butter cold unsalted and cubed (1 stick)

Blend in with the above and then top berries with the result

1         Egg

Process

Toss the berries, sugar, tapioca, salt, and lime juice in a bowl

Spoon into a 2quart baking dish

Combine the flour, coconut, sugar, pecans, baking powder, and salt in a second bowl, using your fingertips, knead in the butter until incorporated.  Mixture should look like coarse sand

Blend in the egg, then arrange the topping over the berries in clumps.

Bake the cobbler for 40-45 minutes in a 375deg pre-heated oven, or until the topping is golden and crisp, and the filling is thick and bubbly.

Cool on a rack for at least one hour before serving.

Serve with crème anglaise
