Banana Nut Bread

Ingredients

1-3/4C                      AP flour

2t                             Double acting baking powder

1/4t                          Baking soda

1/2t                          Salt

1/3C                         Crisco

2/3C                         Sugar

2                              Eggs, unbeaten

1C                            Mashed, ripe, bananas

Process

Preheat the oven to 350F

Grease a 9 x5 x3 loaf pan

Mix the AP flour, baking soda, baking powder, and salt

Mix with an electric mixer on medium speed thoroughly mix the shortening with the sugar, then with the eggs until very light and fluffy. About 4 minutes altogether

Turn mixer to low speed and beat in the flour mixture alternately with the bananas just until smooth

Turn out into a pan

Bake for 1 hour or until toothpick comes out clean

Cool 10 minutes in the pan

Remove to a rack to cool overnight

For banana nut add 1/2C of coarsely chopped nuts to the flour mixture
