Banana Chocolate Chip Muffins

Ingredients

1-1/2C AP Flour

2/3C Sugar

1-1/2t Baking powder

1/4t Salt

1C Mashed ripe bananas (about 2 large bananas)

1ea Large egg

1/2C Melted butter

1/4C Milk

3/4C Semi Sweet chocolate chips

Process

Preheat the oven to 350F

Line twelve 1/3C muffin cups with foil muffin liners

Mix flour, sugar, baking powder, and salt in a large bowl

Mix the mashed bananas, egg, melted butter, and milk in a medium bowl

Stir the banana mixture into the dry ingredients until just blended. Do not overmix

Stir in the chocolate chips

Divide the batter among the prepared muffin cups, filling each about 3/4 full

Bake the muffins until the tops are pale golden, and a toothpick inserted into the center comes out with some melted chocolate attached but no crumbs (about 32 minutes)

Transfer the muffins to a rack to cool
